The Brighton counter is small on purpose. Current mixed boxes include Sakai carbon gyuto for line cooks who want thin food release, Sanjo nakiri with flatter profiles for veg prep, Seki stainless petty knives for fruit, garnish and service jobs, and Binsui-to coarse stones for rebuilding edges before service.
Stock changes by maker and by week. Theo Malon started Litoshi Malon in Brighton in 2020 after several years buying knives for professional kitchens on the south coast. If you need six matching knives for a station, say that first. If you need one honest knife that will survive a busy home kitchen, say what board you use and what you cut most.

Dispatch: UK courier dispatch normally leaves Brighton within 2 working days for in-stock items.
Age: Customers under 25 may be asked for age verification before knife dispatch. All knife sales are 18+.
Special Imports: Listed makers take 6 to 10 weeks when the maker has stock, and 12 to 20 weeks for forge-order pieces.
Deposits: Special-order knives require a 40% non-refundable deposit once the maker has confirmed the order.
Refusals: No swords, tactical knives, fantasy blades, outdoor survival knives, counterfeit sourcing, grey-market sourcing, dropshipping or anonymous marketplace fulfilment.
