House Rules
These tools are simple, sharp and unforgiving of lazy habits. Read this before buying carbon steel, special ordering a maker piece or asking for a polish the steel cannot keep.
First Week With Carbon Steel
Carbon steel will change colour from the first service. Onion, citrus, fish and warm protein will all mark the blade. A blue, grey or straw patina is not failure. Orange rust, black pitting and rough spots mean the knife stayed wet, dirty or trapped under food.
Wipe during prep. Wash by hand. Dry immediately. Do not leave the knife in a sink, dishwasher, damp roll or on a stainless counter with acidic juice under the heel. Use wood or good synthetic boards. Do not use glass, stone or bamboo boards if you want the edge to last.
A thin Japanese kitchen knife is not a lever. Do not pry squash apart, hack bones, twist through frozen food or scrape the board with the sharpened side. Use the spine or a bench scraper.

Special imports from listed makers take 6 to 10 weeks when the maker has stock, and 12 to 20 weeks for forge-order pieces.
Special-order knives require a 40% non-refundable deposit once the maker has confirmed the order.
Wholesale minimum order is 6 knives or 12 stones, with mixed boxes allowed.
Team orders are quoted within 3 working days and normally packed in one labelled roll per station.
Local hand delivery is available within 8 miles of central Brighton on Fridays for orders over £150.
